Favorites

We had a fantastic Third Thursday meeting.  You really missed out if you weren't there but here is a re-cap of our favorites.  If you have one to add, leave a comment and we can update the post!

**Pumpkin Chocolate Chip muffins
4 eggs
3c flour
2c sugar
1c canola oil
1tsp cinnamon
½ tsp allspice
2tsp baking soda
½ tsp salt
1 29oz can of pumpkin
1 12 oz package of mini semi-sweet chocolate chips

Preheat oven to 350. Beat eggs and sugar. Mix in the rest of the ingredients. Spray muffin tins with Pam or use liners. Fill tins ¾ full. Bake 20-23 minutes. 12-14 minutes for mini tins. Use toothpick to test if fully cooked.

2c white sugar
2c cream
2c white Karo Syrup
1c real butter
This will make a batch that will fit into a 9x13 pan.

or for a double batch

4c white sugar
4c cream
4c white Karo Syrup
2c real butter
This will make a batch that will fit into a Texas sheet pan.

Before you start, butter the sides and the bottom of the pan that you are going to pour the cooked caramel into.
Melt the butter (I melt the butter on low).  Remove from heat and add sugar then add cream and Karo Syrup.
Cook over medium heat stirrng quite often.  I like a soft caramel so I cook it from about 239 to 242 degrees.  I have cooked them as high as 245degrees and they are still soft.  Pour into buttered pan.  After the caramel cools, if you decide you want it a little firmer, you can remove it from the pan and re-cook it.
This recipe takes about 1 hour and 20 minutes to cook.
