February Third Thursday Meeting!!!



Join us on Thursday, February 16 at 6:30 at Lisa King's home! We will be investigating some ways to a healthier YOU. Learn about healthy, natural ways to keep your body running in tip-top shape. A yoga demo and some ideas on how to relieve stress and maintain mobility and strength. Come to our juice bar to sample a variety of juices and smoothies- Mmmmm, good and good for you! Highlights from January's 3rd Thursday meeting


What a great night of food and fun! A big thanks to Kellee for hosting in her home on her birthday!!! (check out the pics of Kellee's special birthday song from Elvis!) Another thanks to Kellee and Darlene for their cooking instructions and the delicious food they prepared!

ed about pantry cooking- how to make meals with what you've got on hand. She demo'd a couple of dishes and showed how you can easily expand a meal if you need to. She also shared a list of what to have in a well stocked pantry- and after seeing her beautiful pantry, she is pretty much an expert! Find her list and recipes below!


Darlene demo'd and taught us about homemade bread. During her demo, she shared many helpful tips- did you know that salt will inhibit your yeast? Don't add it too soon to the recipe! Also, you can buy powdered honey- who knew. I also appreciated getting to see the many different grains Darlene uses in her 14 grain bread- some of the grains were new to me and now I know what to look for so I can attempt her recipe on my own. As was evident in tasting her breads, Darlene is an expert and we loved learning from her. The Well Stocked Pantry

Tinned Goods: peaches, plums, pears, apricots, apple pie mix, pineapple, beetroot, soups, spaghetti, baked beans, oysters/mussels, salmon, anchovies, ham, condensed milk, coconut milk, chicken stock
Baking Goods: flour, baking powder, sugar, brown sugar, xylitol, baking soda, vanilla ess, milk powder, yeast, sea salt, icing sugar, corn flour, cocoa, coconut, popcorn, choc chips
Pantry Goods: pasta, noodles, rice, soup mix, sultanas, dates, jellies, potato chips, peanut butter, crackers, almonds, walnuts, peanuts, cashews, pasta sauce, herbs/spices, rolled oats
Cleaning: laundry liquid, dish liquid, soaker, toilet paper, vinegar, milo
Personal Items: shampoo, conditioner, soap, toothpaste, feminine products
Drinks: water, juice
Condiments: catsup, worc. sauce, soy sauce, oyster sauce, dressing, mayonnaise, pickles, relish, olive oil, mustard
Misc: batteries, candles, matches, cling wrap, paper towels, foil

Sweet and Sour Tuna over Rice (Regular recipe)
1 large onion 1 large green onion
chop and fry in 3 Tbsp butter until brown
Add:
1 Tbsp lemon juice 1 Tbsp soy sauce 2 Tbsp brown sugar
1 can tomato soup 1 can tuna fish, drained 1/2 can water
Heat and serve over rice.

Sweet and Sour Tuna over Rice (Pantry recipe)
1 Tbsp lemon juice 1 Tbsp soy sauce 2 Tbsp brown sugar 1 can tomato soup 1 can tuna fish, drained 1 can pineapple w/ juice 1 can vegetables (your choice) 1/2 cup dried onions Heat and serve over rice

Crazy Cake
from:allrecipes.com this was popular during the depression, no eggs 3c all purpose flour 2 c white sugar 1tsp salt 2 tsp baking soda 1/2 c unsweetened cocoa powder 3/4 c vegetable oil 2 Tbsp distilled white vinegar 2 c cold water

1. Sift flour, sugar, salt, soda and cocoa together into a 9 x 13ungreased cake pan. Make 3 wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork.
2. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until toothpick inserted comes out clean. Frost with your favorite icing.

14 Grain Bread
From Darlene Johnson

This recipe makes four loaves.

In a Bosch, or similar bowl, with dough hook on, add:
6 cups very warm water
2 Tbsp yeast
1 cup raw sunflower seeds
1/3 cup sesame seeds
1/3 cup amaranth
1/3 cup millet
1/3 cup flax seed
2 cups 9 grain cereal
1/2 cup honey or honey powder
3 Tbsp dough enhancer
2 Tbsp lecithin

3 cups whole wheat flour
1/3 cup canola oil (I add the oil first so the honey comes out of the cup easier)
1/2 cup vital wheat gluten (I add 6 Tbsp)
(I also add 4 Tbsp brown sugar)

Mix all ingredients. Let sponge for 10-15 minutes. Then add:
2 Tbsp salt
3 cups kamut flour
3 cups spelt flour
Enough whole wheat flour to clean the sides of the bowl.

Directions:
1. Let knead for 10 minutes
2. Shape into 4 loaves and place in well greased loaf pans
3. Let rise for about 1/2 hour, until about double in size
4. Bake at 350 degrees for 30-35 minutes or until done. (3o minutes does it about right in my oven)
